Recipes - Baby Corn Fry

Ingredients:
200 gms. baby corn
4-5 palak leaves (finely minced)
1 green chilly (finely minced)
Few chopped coriander leaves
½ tsp. ajwain
½ tsp. chilly powder
½ cup chickpea flour
¼ cup rice flour
2 tbsp. corn flour
Salt as per taste
Oil for deep frying
Method:
Wash and cut baby corn into 1 ½ " pieces. Apply little salt and chilly powder and set aside for some time.
In a bowl, combine chickpea flour, rice flour and corn flour. Add palak, green chilly, ajwain, coriander leaves and salt. Add enough water and prepare a thick mixture and set aside.
Heat oil in a deep pan. Dip the baby corn in the prepared mixture and deep fry in hot oil until crunchy and light golden in colour. Serve with sauce or any chutney of your choice.
