Recipes - Salted Raw Jackfruit with Sweet Potato

Ingredients:
1 cup salted raw jackfruit
1/2 cup sweet potato (cubed)
2 short red chillies
3-4 long red chillies
1/2 tsp. cumin
1 small onion
2 seeds tamarind
8 flakes garlic
1/4 cup grated coconut
Salt as per taste
For seasoning:
1 tbsp. coconut oil
1 tsp. mustard
2 sprigs curry leaves
Method:
Soak salted jackfruit in water for few hours. Later drain and cut into cubes and set aside.
Remove the skin of sweet potato and cut into cubes.
Grind chillies, cumin, onion, garlic and tamarind adding little water into a smooth paste.
Heat oil in a vessel and splutter mustard. Add curry leaves. Add masala paste and fry for some time. Add jackfruit n sweet potatao pieces along with masala water ( rinsing the blender). Add salt and cook until soft. Lastly add grated coconut.
Heat a seasoning pan with oil. Splutter mustard and add curry leaves. Pour this seasoning over the dish and cover to seal the aroma.
Serve with steamed rice and sambar or curry of your choice.
