Recipes - Banana Roll
Ingredients:
2 bananas/ Nendran ( preferably over ripe )
½ cup all purpose flour
1 tsp. cardamom powder
¼ cup cashew nuts ( roasted)
½ cup grated coconut
1 tbsp. butter/ ghee
2 -3 tbsp. powdered sugar
2 drops vanilla essence
Pinch of salt
Oil for deep frying
Method:
Steam the bananas for about 10 mts. in a steaming pot. Peel and mash after they cool. Add coconut, cashew nuts and cardamom powder. Mix well and roll into 2 " finger size rolls.
Mix flour with water and prepare semi thick batter. Add a pinch of salt. Heat butter or ghee and pour over the batter, mixing it well.
Heat enough oil in a deep pan. Dip the rolls in batter and fry in hot oil until light brown. Drain them on absorbent paper and sprinkle powdered sugar before serving.
