Recipes - Chicken Ghee Roast

Ingredietns:
1 Kg chicken
8-10 long red chillies
10 flakes garlic
1 tsp. cumin
½ cup cashew nuts
1-2 tbsp. vinegar
2 tbsp. tomato sauce
1 tbsp. sugar
½ cup ghee
½ tsp. turmeric powder
Handful of curry leaves
Salt as per taste
Method:
Soak chillies in water for about 2 hrs. Soak half of the cashew nuts for 15 mts. Cook chicken along with little salt and turmeric powder and set aside.
Grind soaked chillies and cashew nuts, adding cumin and garlic flakes into a smooth paste. Heat ghee in a pan and slightly fry the curry leaves, remove and set aside. In the same ghee add remaining cashew nuts and sauté until slightly brown. Now add masala and fry for 10- 15 mts until ghee floats. Now add cooked chicken, salt, vinegar, tomato sauce and mix well. Bring to a boil. Lastly add the fried curry leaves.
Serve hot.
