Recipes - Vegetable and Peanut Salad

Ingredients:
½ cup grated carrot
½ cup roasted peanuts (crushed)
1 green chilly (minced)
1 small onion (minced)
1 small tomato (chopped)
½ cup cucumber (chopped)
1 small boiled potato (cubed)
1 tbsp. lime juice
Salt as per taste
1 tsp. oil
½ tsp. mustard
2 tbsp. chopped coriander leaves.
Method:
Mix all the vegetables in a mixing bowl. Add the crushed peanuts. Add green chilly, salt and lime juice. Toss the salad well. Heat oil and splutter mustard. Pour this over the salad. Mix well and set the salad in the refrigerator for 10-15 mts. and serve with coriander leaves.
