Recipes - Pasta in Broccoli Sauce
Ingredients: 2 cups pasta
100 gms. broccoli
1 large potato
2 cups milk
2 tbs. oregano
1 cup corn
½ cup mushrooms
1 capsicum
2 stems of spring onion
1 tbsp. freshly crushed pepper
1 tbsp. butter
1 tbsp. oil
Salt as per taste
Veg. or chicken cube (optional)
Method:
Cook pasta as per packet instructions. Pressure cook potato and peel. Clean broccoli under running water and soak the florets in hot water for five minutes. Slice mushrooms , capsicum and spring onions. Dice the potato.
Grind, strained broccoli along with potato, adding milk, into a smooth paste. In a heavy bottomed pan, heat oil and butter.
Add spring onion and sauté. Add sliced mushrooms , capsicum and corn. Stir fry until the vegetables turn tender. Add the broccoli-potato mixture and cook on medium heat, until thick. Add cube ( optional), salt and pepper. Lastly add oregano.
Once the sauce is thick and creamy, add cooked pasta and mix well.
Serve hot.
