Recipes - Beetroot Pulao

Ingredients:
1 cup Basmati rice
½ cup beetroot ( chopped)
1 potato ( cubed)
1 onion (chopped)
6 green chillies
2” piece of ginger
5 flakes garlic
¼ cup chopped coriander leaves
Whole garam masala ( bay leaf/ cinnamon/cloves)
2 cups hot water
½ tsp. turmeric powder
1 tbsp. ghee
Juice of 1 lime
Method:
Wash and soak rice for about 30 minutes. Grind together green chillies, coriander leaves, ginger and garlic to a fine paste with very little water. Heat ghee in a deep bottomed pan and fry the whole garam masala. Add onions and fry till slightly golden. Reduce heat .Add rice and fry for about 3 minutes. Add the vegetables and the ground masala and mix. Add salt, lemon juice and turmeric powder. Add hot water cover and cook for 20 to 25mts . Serve with Raita.
