Recipes - Egg Mushroom Curry

Ingredients:
100 gms. button mushrooms
4-5 hard boiled eggs
3-4 tbsp. oil
1 cup thick coconut milk
2-3 tbsp. lime juice
Salt to taste
For garnishing:
Coriander leaves
Paste:
6-8 dry long red chillies
A small piece of ginger
3-4 flakes of garlic
Method:
Grind red chillies, ginger and garlic to a smoth paste . Heat the oil in a pan and fry the mushrooms 3-4 minutes. Mix the spice paste and mix the coconut milk. Mix well. Add half cup of water and bring the gravy to the boil. Add lime juice and salt. Now add the boiled eggs and allow the gravy to simmer for 2-3 minutes. Garnish with coriander leaves. Serve hot with steamed rice.
