Recipes - Rice Kheer

Ingredients:
One small tea cup of basmati rice
1 ltr fresh full cream milk
1 1/2 cup sugar
Pinch of Yellow Food colour
Handful of raisins, cashews and almonds
Small stick of cinamon,4 cardomoms,4 cloves
1 tbsp.of fresh ghee
Method:
Wash the rice and put it in a vessel. Add half the quantity of milk and one cup water. Add the garam masala and food colour. Let it all boil together till rice is done to a soft consistency. Put limited quantity of water for the rice to cook. After the rice is done, add the remaining milk and the sugar and boil to a thick consistency. Keep it aside. Heat ghee in a seperate pan, add the dry fruits and fry till slightly brown. Add the cooked rice to this pan and close the fire. Keep in the fridge to cool before serving. While serving, if you wish to eat in a thinner consistency add more milk to thin the kheer.
