Mangaluru, Aug 5: After the successful introduction of Holige (sweet pancake) made from cocoa and areca nuts recently, a new variety of Holige has emerged. This new kind of Holige promises to be tasty and fragrant. It is made from betel leaves. Srikrishna Shastri from Gurimoole village, who was instrumental in inventing cocoa and areca nut Holige sometime back, is again the man who has introduced this new variety of Holige. Shastri is an expert cook.
Shastri has made use of big size betel leaves to make this sweet dish. Forty Holiges have been made by using about 25 betel leaves (Kavale variety). Currently, the Holige is priced at Rs 15 per piece. This Holige is made by grinding all the ingredients together in a mixer grinder and then inserting balls made from the dough into the outer covering made of Maida. Its taste is just like the customary Thamboolam. Shastri opines that this is not bad for health as it is made of betel leaves.
Campco had made Kaju Supari by using areca nut powder that is normally used for making the Thamboolam in the past. Ideal ice creams has already introduced Thamboolam ice cream. Now Shastri Home Products is raring to enter the market to cater to the taste buds of the lovers of both Thamboolam and Holige.
